Beautifully British Blueberry & Strawberry Filo Pies
Celebrate the British strawberry with these yummy Blueberry and Strawberry Filo Pies
Makes 12 little pies
Lovely as a teatime treat or a fancy-looking pudding, these pretty little delights are light and fruity and easy as, well, pie. My children love to help making these, carefully placing the berries on top.
Non-stick 12-cup muffin tray
100g (3oz) melted butter, plus extra for greasing
6 large sheets of filo pastry, cut in half
Icing sugar, for dusting
150ml (5fl oz) double cream
1 tsp caster sugar
1 tsp vanilla extract
12 large strawberries, sliced
1 tbsp golden syrup
Preheat the oven to 220ºC/425ºF/Gas Mark 7. Butter the muffin tray. Brush the cut filo sheets on both sides with butter. Line each cup in the tray with a filo sheet. Put the tray in the oven and bake for five minutes or until the pastry is golden. Remove the tray and set aside. When the cases are cool, remove from the tray and dust the cases by putting icing sugar into a sieve and shaking it over them.
Whisk the cream with the sugar and vanilla extract until thick. Add a spoonful of cream to each case, pop on a few strawberry slices and blueberries for a tasty topping – as well as a true Brit red, white and blue effect – and drizzle with a little golden syrup.
