Blueberry Yoghurt Lollies
Make these fabulously thirst-quenching Blueberry Yoghurt Lollies

These lollies can also be made with strawberries, raspberries, blackberries or any other summer berry. But if you are using raspberries or blackberries, sieve the purée before adding it to the moulds to remove the pips. If honey-flavoured Greek yoghurt is not available, stir two teaspoons of clear honey into natural Greek yoghurt.
200g (7oz) blueberries
3 tbsp apple juice
200g (7oz) honey-flavoured Greek yoghurt
Remove any stalks from the blueberries and place them in a liquidiser. Add the apple juice and blend until you get a smooth purée. Stir in half of the blueberry and apple purée into the honey-flavoured yoghurt and then spoon half of this mixture into four 100ml (3 fl oz) lolly moulds. Add the rest of the blueberry and apple purée and then top with the remaining yoghurt mixture. Freeze the lolly mixture until it is almost firm, then push a lolly stick into each mould and freeze once again until the lollies are solid.
